Our vineyard has deep rich basalt soils and sits at a cool 1000 metres on the north facing slopes of Mt Canobolas.The combined climatic conditions of this site are near to perfect for Cool Climate wines. Our approach to growing and winemaking is one of minimum intervention. We do not use fertilizers or insecticides, all fruit is hand picked, whole bunch pressed and wild yeast fermented with extended lees contact with no additions or fining. A natural approach!
Extended time on lees gives this vintage additional complexity. Notes of Honeysuckle and apricot reveal themselves on a textural palate with a lingering citrusy finish of a cumquat like flavour.
