Originating in the foothills of the Pyrenees in the southwest of France, this late ripening variety has fruit flavours ranging through a tropical spectrum, custard apple, pineapple, guava, lychees to quince with a slight gingery spiciness. Wild yeast fermented with 18 months on lees and regular stirring. Lightly filtered and bottled with no additions or fining, Vegan friendly / a natural wine.
